Beets

Why they’re super:
Beets are loaded with antioxidants and have been found to protect against cancer, heart disease, and inflammation. Naturally sweet and full of fiber and vitamin C, beets make a delicious and nutrient-packed addition to any meal.

How to enjoy them:
Try finely grated raw beets in your salads or roast them along with sweet potatoes and parsnips for a colorful and flavorful side-dish—just keep in mind that certain cooking methods (like boiling) may decrease their nutritional value. And don’t forget about the leafy green tops, which are rich in iron and folate, and can be prepared much like their cousins, Swiss chard and spinach.

Summer Squash and Red Peppers

Mini Bell Pepper Magic

If you haven’t tried the mini bell peppers yet you need to pick some up.  They are in season now come in an array of colors and are popping up everywhere.  They are much sweeter and crunchier then the large standard bell peppers.  They come equipped with much more nutrition as they are smaller and are picked sooner then the large type.  They are very affordable being by weight they weigh less which enables you to get the perfect amount you need.

Affordability Factor

I picked up 4lbs of these for $3.99.  I love to lightly grill these for sandwiches, salads, tofu, chicken, to add to quinoa, rice, salads or just eat plain.  The small size keeps them fresher and they are just delicious.  If you are looking for an affordable healthy snack for your children these make a great snack for your kids and family.  Add some zip to your meals with these delicious mini peppers.

If you are looking to sweeten your dish without adding sugar, honey, agave, dates or other, try pureeing the peppers and adding them to your smoothies, drinks, meal, dessert, salad or other.  They add a nice fresh sweet kick to your food that doesn’t disappoint.

Delicious Sweet Cilantro Pepper Vinaigrette or Basil Pepper Dressing

Another wonderful use and one of my favorite is using them for a fresh salad dressing.  I simply puree the peppers, fresh herbs like cilantro or basil, then add apple cider vinegar, olive oil and a shake of sea salt and pepper for a super fresh dressing.

If you have been disappointed before when buying avocados, don’t let that happen again.
I am going to tell you the tricks to perfect avocados every time.

The first step is finding the greenest, largest and hardest avocados for the best price.
You want to pick them up 3 days before you need them.

Place them in a bowl and find a place they can ripen, that is out of the way.
Here is a picture of Day #1.

Day #1  during your pm check them and turn them once. Don’t squeeze them.

Day #2 am check you will see them getting darker . Turn them again checking them again in the night.

Day 3 am check if they are ready in the am refrigerate.  If it needs more time turn wait until the eve of day
#3  before eating turning one more time.  They should now be Perfect. Throw them in the refrigerator and they will be ready for guacamole or fresh avocado anytime. Refrigerating will stop the ripening process leaving them just right for eating.


You can cut them up for mexican food, sandwiches, or any other way you want to eat them.


When buying summer Squashes be sire to find small firm squashes.  You want to look for zucchinni or summer squashes that are under six inches.  Squash is freshest when its is bright with a glossy skin. Avoid the nicks and bruised squash as it is likely to begin decaying.

Storing Summer Squash:

The best way to keep your squash fresh is by storing it in the vegetable bin of the refrigerator.  Storing it in a bag it will stay fresh up to a week.

Preparing Summer Squash

Start with the ends slicing the tip of each end off.  Squash is best when cut into 1/4 inch slices suteeing in extra virgin olive oil for 1-2 minutes.

Favorite Uses for Summer Squash:

Our favorites are using squash in pasta and Italian dishes.  Our favorite way to prepare summer squash is sauteed with fresh garlic, onions, tomatoes, oregano and parsley in extra virgin olive oil.  As squash cooks quick be sure to cook them only 1-2 minutes.  With squash you really just want to warm them so they soften slightly but they should still be crisp and have a snap to them.  If they are overcooked they will become too soft and rather unpleasant. Avoiding overcooking will also keep the nutritional value intact.


Purple foods are very important as they are packed with higher levels of antioxidant anthocyanins which help you bolster the immunity and help prevent sickness and disease.  Purple foods are  power packed with nutrients and essential in maintaining a healthy lifestyle.
