Cilantro Cantaloupe Salsa
with Peppers & Onions

1 cup Organic Cantaloupe, seeded peeled and finely diced
1/4 cup Organic Cilantro, chopped
1 cup Organic Yellow Pepper, finely diced
½ small Organic Red Onion, finely chopped
½ clove Organic Garlic, minced
½ Organic Jalapeno, seeded and finely diced
2 Tablespoons Organic Lemon Juice
Combine all chopped ingredients in a bowl.
Season to taste with freshly ground pepper.
Goes great as a dip, to top a salad over chicken, tofu, steak or fish. We also enjoy it on our sandwiches, wraps, burritos and more. If you don’t want it spicy you can omit the jalapeno and add green bell pepper in its place.
