Kale & Turnip Greens with Garlic & Onions

Naturally Vegan & Vegetarian
Time: 25 Minutes
Yield: 4 Servings
(6 Item Recipe)

Ingredients:

2 Cloves Organic Garlic, sliced
1/2 Organic Onion, chopped
1 Bunches Organic Lacinato Kale
1 Bunches Organic Turnip Greens
1 Teaspoon Extra Virgin Olive Oil
Sea Salt & Pepper to taste (optional)

Directions:

Rinse greens well, removing stems.  In a large pot of boiling water cook greens rapidly, covered, over medium heat for 25 minutes until tender.  In small hot skillet add olive oil garlic and onions cooking until golden and tender, remove and set aside.  Serve greens with some of the pot liquid and a teaspoon of the roasted garlic and onions mixing well.

Note:

If desired, cut greens with sharp knife and fork prior to serving.  Makes it easier to eat.


SIMPLE SALAD/STARTER/SIDE DISH/LUNCH

Kale Power Salad with Fruit & Nuts
(RAW,Vegetarian & Vegan)

Serves: 4-6
Prep Time:  15 Minutes

INGREDIENTS NEEDED:
1 Bunch RAW Organic Lacinato Kale, washed, pat dried, and stems removed, cut into small pieces
1/4 Cp. Organic Dried (Unsulphured)Cranberries
1/4 Cp. Organic Dried (Unsulphured) Currants
1/4 Cp. RAW Organic (unsalted) Walnuts
1/4 Cp. Raw Organic (unsalted) Pumpkin Seeds
1/4 Cp. RAW Organic (unsalted) Sunflower seeds
1/2 Cp. Organic Lemon Juice
1/2 Cp. Extra Virgin Olive Oil
1 Organic Roma Tomato
Sea Salt & Fresh Ground Pepper to taste

Directions:

Wash and dry Kale.  Core out the hard center stalk by cutting close to the stalk and all the way down the stalk on both sides until hard center core is removed.  Take two halves and stack them.  Roll them then make 1 inch slices across to get nice pieces.  Cut Roma tomato into pieces.  Put cut kale in large bowl. Top kale with cut tomatoes.  Top with Cranberries, Currants, Walnuts, Pumpkin Seeds and Sunflower Seeds (hulled unsalted RAW).  Take extra virgin olive oil, lemon, sea salt and pepper and whisk until well blended.  Dress salad pouring dressing evenly over salad.  Refrigerate for 10 minutes.  Toss and enjoy!

Prep Time:  30 Minutes

INGREDIENTS NEEDED:
1 Bunch RAW Organic Lacinato Kale
1/4 Cp. Organic Dried (Unsulphured)Cranberries
1/4 Cp. RAW Organic (unsalted) Sunflower seeds
1/4 Cp. Organic Lemon Juice
1/4 Cp. Extra Virgin Olive Oil
1 Organic Roma Tomato
Sea Salt & Fresh Ground Pepper to taste

How to:

KALE: Dark Leafy Winter Greens…a great source of Nutrition

Dark Leafy winter greens are highly nutritious and a great sources of antioxidants to get in this year.  Kale goes well in salads and in soups all year long.  My favorite variety is the Organic Italian Lacinato, aka Organic Lacinato Kale .  With many types of Kale available, I find this one to be far better then others. Kale is not new and dates back to the late 18th century.  Being a very hardy and cold tolerant crop, its taste is greatly enhanced in cold, frosty conditions.  It takes sixty two days for Organic Lacinato Kale to fully mature and be ready to eat.   Kale is at its freshest raw state when picked up from your local farmer’s market, C.S.A., or local healthy food grocer.

Organic Kale has strong, bitter, almost pungent notes however this is a flavor that can be rounded well with lemon, tomato and dried organic un-sulphured fruit like dried cranberries or raisins.  The fruit nicely melds the bitter notes with a subtle sweetness giving a flavor you are sure to love.

TIP: Use some extra virgin olive oil to soften the leaves to perfection.

Preparation:  Raw Organic leaves the highest concentration of nutrients intact.

Nutrition: Kale is high in Vitamin C, Vitamin K, Vitamin A, beta carotene, lutein, zeaxanthin, calcium, and carotenoids.  Also contains sulforaphane delivering a chemical thought to hold  anti-cancer properties. In addition, has indole-3-carbinol, a chemical known to boost DNA repair in cells and thought to block the growth of cancer cells.  Kale is also considered to have anti-inflammatory properties.
