Gorgonzola Herb Chicken w/Fresh Cilantro Mint Sauce

(Carnivore version)

Serves: 4-6
Cooking Time:  20-25 Minutes

4 Boneless, Skinless Chicken Breasts (Natural ,hormone free, antibiotic free and vegetarian fed)
1/2 Organic Yellow Onion (minced fine)
1 Garlic bulb (minced fine)
1 Teaspoon Organic Lemon Juice (Fresh is best)
2 Sprigs of Organic Cilantro
2 Sprigs of Organic Mint
1 1/2 Cps. Gorgonzola Cheese
2 Tablespoons Extra Virgin Olive Oil
Sea Salt & Pepper to taste

Mince the onions, garlic, cilantro and mint either by hand or with food processor.  Add in lemon juice, extra virgin olive oil, salt, pepper and Gorgonzola cheese until it becomes a paste.  Set aside while cooking chicken.   Saute your chicken breast in extra virgin olive oil 3 -4 minutes on each side until golden on medium low heat.  Last 3 minutes of last side top generously with Gorgonzola mixture and cover with lid.  Gorgonzola mixture will melt and soften on top of chicken.  Plate, Serve and Eat.

2lbs Organic Boneless, Skinless Breast (4 Breasts or 12-16 tenderloins)
Organic yellow onion (1/2 medium size)
Organic Garlic (1 medium bulb)
Fresh Organic Lemon Juice (1 lemon or 3 teaspoons lemon juice)
Fresh Organic Cilantro & Mint (2 Sprigs each)
Gorgonzola Cheese (1 1/2Cps.)
Sea Salt & Pepper to taste
Extra Virgin Olive Oil (2 Tablespoons)
