Kale with Roasted garlic, olive oil and tomatoes

KALE WITH ROASTED GARLIC, OLIVE OIL AND TOMATOES
(Vegan/Vegetarian Recipe)

Serves: 4
Baking Time:  15-20 Minutes

INGREDIENTS NEEDED:
1 Bunch Organic Lacinato Kale
1 Bulb of Organic garlic, minced finely
2 Cups of Organic Cherry Tomatoes
2 Tablespoons of Extra Virgin Olive Oil
Ground Pepper to taste
Sea Salt to taste

Directions:
Wash and dry kale leaves.  Remove hard center stalk.  Slice in strips.  Preheat pan add olive oil, garlic, cook till golden . Remove garlic from pan and put in small bowl, you will be using this to top the kale when done.  Take kale and cook on medium high stirring vigorously.  When kale begins to wilt add tomatoes and cook on medium low for several minutes until tomatoes are warmed. Sprinkle with sea salt and pepper to taste. _____________________________________________________________________________________________
