GOLDEN VEGAN VEGETABLE HERB LOAF
(Vegan/Vegetarian Recipe)

Serves: 4-5 (Depending on how hungry your eaters are)
Baking & Cook Time:   1 Hour & 8 Minutes

INGREDIENTS NEEDED:
2 Tablespoons Extra Virgin Olive Oil
1 1/2 pounds Tempeh
1/3 Organic Ketchup
1/4 Cup Organic Nutritional Yeast
2 Tablespoons Organic Almond Milk
3/4 Cup Gluten Flour
1 Cup Organic White or Yellow Onion, chopped fine
1/2 Cup Organic Celery, chopped fine
1/2 Cup Organic Carrots, chopped fine
2 Cloves Organic Garlic, Chopped fine
1 Organic Roma Tomatoe, Chopped fine
1 Tablespoon of each Fresh Organic Herbs, washed, dried, choped (Rosemary, Thyme & Oregano)
Sea Salt & Pepper to taste

Directions:
Preheat oven to 375 degrees.  Oil baking dish with olive oil (1 teaspoon only).  Shred tempeh.  Mix Organic Ketchup, nutritional yeast, almond milk together in bowl until blended evenly.  Add tempeh and flour blending until moist mixture is formed.  Put in oiled baking dish, covering with foil.  Bake 14 minutes until heated.  Oil a 9 x 5 x 2 loaf pan with olive oil.  Heat skillet to medium heat adding olive oil, garlic, onions, celery, carrots.  Cook 6 minutes until tender.  Add tomato fresh cut organic herbs (rosemary, thyme & oregano), sea salt and pepper.  Cook an additional 4 minutes more until tomato is tender.  Add hot tempeh mixture, stirring and blending until even.  Take hot mix and put into oiled loaf pan, using any remaining olive oil for coating top.  Cover with foil and bake 22 minutes, until evenly heated throughout loaf.  Uncover and bake 18 minutes more, until golden.  Cool for 4 minutes.  Remove from loaf pan.  Cut thick slices and serve.  Goes nice with our Vegan Garlic Potato Mash and vegan gravy (Also featured in recipe section).  _____________________________________________________________________________________________
**Naturally Vegan/Vegetarian Meal**  If you do not have almond milk on hand you can substitute any other non dairy milk such as coconut milk, rice milk, or other.
