Recipe: Wheat Free Vegan Vegetarian Chocolate Chip Cookies

DESSERT: Wheat Free *Naturally Vegan & Vegetarian *Chocolate Chip Cookies

Yields: 1 dozen (12 cookies)
Cook Time: 18 Minutes

4 Cups Organic Barley Flour
1/2 Teaspoon Baking Soda
3/4 Cup Vegan Cane Syrup (See Recipe previously provided in recipe section)
2 Tablespoons Organic Almond Milk
1 1/2 Teaspoons Vanilla
1/2 Teaspoon Sea Salt
1 1/4 Cup Semi Sweet Chocolate Chips
3 Tablespoons Extra Virgin Olive Oil


Preheat oven to 375.  Whisk Barley, baking soda, vegan cane syrup, almond milk, vanilla and salt together in bowl, blending evenly.  Stir until mixture moistens.  Stir in chocolate chips.  Scoop 1/3 cup of dough per cookie onto oiled baking sheet.  Space at least 1 inch apart. Bake 18 minutes.  Cookie will golden brown, crack and puff when ready.  Cool Cookies and serve.
