Espresso, Parmesan Ravioli w/ Chicken, Carrot & Cilantro (Made w/Whole Grains)

ESPRESSO, PARMESAN RAVIOLI W/CHICKEN, CARROT & CILANTRO – MADE WITH WHOLE GRAINS WHEAT AND BARLEY
(Vegan/Vegetarian & Carnivore Recipe)

Cooking Time: 30 Minutes

INGREDIENTS NEEDED:
2 Teaspoons Espresso
2 Egg Whites
1.5 Cups Whole Wheat Flour & 1.5 Cups Barley Flour (Whole Grain) – Friend of the heart
1 Cup Purified, Alkalized, Antioxidant Water
1lb Boneless Skinless Chicken Breast
1 Medium Carrot Chopped
1 Celery Stalk, chopped
1 Tablespoon Roasted Coffee Beans
Extra Virgin Olive Oil
1 Cup Parmesan
Sea Salt & Pepper to taste
2 Sprigs Fresh Organic Basil, chopped fine

Directions:
Prepare a dough by adding the epresso, water, eggs and flour together.  Knead until smooth.  Separate into 2 equal pieces.  Set aside.  In small pan sear chicken, celery, onions, coffee beans, and water to cover, cook chicken until juices are clear and water is absorbed.  Do not overcook. Remove whole coffee beans and discard. Cool. Shred or finely dice chicken, add cooled cooked carrots, celery onion mixture, parmesan, chopped Basil, sea salt and pepper making a stuffing for the ravioli. Set bowl with stuffing aside.   Roll out a thin sheet of pasta, drop stuffing in 1 tablespoon sizes.  Place another rolled sheet of dough on top.  Cut out ravioli. You can fold edges in if desired.  Brushing one side with egg wash will help it stick.  Boil fresh ravioli once made, until they float. Then remove and drain and finish by pan sauteeing them with butter for a couple minutes for a light sear.  Sprinkle with more parmesan, pepper and extra virgin olive oil.
