This recipe is super quick. We have substituted out the kidney beans and replaced them with nutritious lentils. There are a couple of types of lentils out there. Our preferred type are the brown lentils available in small 16 oz size bag.

TOMATO & YELLOW PEPPER CHILI W/BROWN LENTILS & FRESH CILANTRO
Yields: 6 Servings
Cook & Prep Time: 50 Minutes
INGREDIENTS NEEDED:
8 Cups Low-Sodium vegetable Broth, separated into two portions (3/4 in one bowl and 1/4 in another)
1 Medium Organic Yellow or Brown Onion
1 Organic Yellow Pepper
4 Teaspoons Organic Chili Powder (unsalted)
8 Fresh Organic Tomatoes (4 Cups)
1/4 Cup Fresh Organic Cilantro, chopped
5 Cloves Garlic, chopped fine
Directions:
Bring 3/4 Cup broth to a boil, reduce heat to low. Take chopped garlic, onions and yellow peppers cooking until onions turn clear and tender (About 6 minutes). Add chili powder. Stir frequently for the next couple minutes. Add fresh tomatoes and lentils along with remaining 1/4 cup vegetable broth. Increase heat up to medium bringing it to boil, reduce heat to low and simmer covered for 25 minutes until lentils are soften. Remove cover and cook for 15 additional minutes. Serve the chili in a bowl and top with fresh Organic Cilantro. You can also add other toppings if you have any toppers on hand. I love serving this in a fresh sourdough bread bowl making it a hardy, delicious and nutritious vegan, vegetarian meal.
