Cheesy Enchiladas with Cilantro Chicken

CHEESY ENCHILADAS WITH CILANTRO CHICKEN
(Vegan/Vegetarian & Carnivore Recipe)

Servings:  4
Baking Time:  30 – 35 Minutes

INGREDIENTS NEEDED:
1/4 Cup Extra Virgin Olive Oil
1 Medium to Large Organic Onion
3 Bulbs Organic Garlic
Fresh Raw Organic Cilantro
1 Small to Medium Size Organic Fresh Raw Jalapeno, Cut into 1/4 dice to fine
16 oz Mozzarella Part Skim Cheese
Organic Enchilada Sauce (store bought ok or see recipe for home made sauce that is cheaper, less sodium, and you get more then store bought – you choose)
10 Organic Corn Tortillas
1-2  Grilled Boneless Skinless Chicken Breast, shredded
1/2 of 1 Medium Organic scallion/green onion, diced fine

Directions:
Preheat oven to 400 degrees. Grill 1-2 medium boneless skinless chicken breast until golden, don’t over cook.  Shred up chicken and set aside. Take Onions both yellow and green, Garlic and cilantro and chop fine.  When chopped set aside in bowl.  Measure out 16 oz of Mozzarella and put in another bowl.  Brush Corn tortillas with olive oil on both sides.  Put in oven on baking tray for 3 minutes until soft.  Pull out and are ready for recipe.  In separate oven safe dish pour 3/4 of enchilada sauce in bottom.  Take tortilla, one teaspoon of chicken mixture, one teaspoon of cilantro mixture and 1/4 cup Mozzarella in center of tortilla.  Roll up and place in enchilada sauce. Continue until all 10 tortillas are filled, rolled up and put in sauced cooking dish.  Once all are rolled and put in baking dish, take remaining enchilada sauce and pour over the top.  Cover all enchiladas. If there is any cheese or cilantro mixture sprinkle over top of enchiladas.  Put oven safe dish in oven and cook for 30 minutes.  Pull out let sit for 3 – 5 minutes until cooled, serve and eat.

Mods**Vegan/Vegetarians: Substitute dairy cheese with soy cheese.  Replace chicken with grilled tofu, tempeh or seitan.  All other steps remain the same**

Organic Enchilada Sauce (16 oz) (Whole Foods natural jarred ok or see fresh recipe to make your own)
Boneless Skinless Chicken Breast, tofu or seitan (1)
Scallions (1/2 of one medium)
