Coconut Almond Truffles with Raw Cacao & Cranberries
(RAW/Vegan/Vegetarian Dessert)
Yields: 12 Truffles
Prep Time: 15-20 Minutes
INGREDIENTS NEEDED:
1/4 Cup Raw Organic Almond Butter
1/2 Tablespoon Coconut Oil
2 Tablespoons raw Cacao powder
1/4 Cup Raw Organic Almonds
1/2 Tablespoon Organic Chia seeds (optional)
1/4 Cup Raw Organic Walnuts
1/4 Cup Organic (unsulphured) Dried Cranberries
1/2 Teaspoon Vanilla
2 Tablespoons almond milk
Agave to taste
Directions:
Blend all ingredients together in a food processor, except for coconut flakes and cranberries which will be used to top truffle. Roll out dough into small to medium size balls. Roll into coconut and cranberry mixtures for a delicious and nutritious layer of texture to your truffle. You can roll your truffle into raw cacao powder, or even cinnamon and vegan cane sugar. Truffles can also be made rolling into just coconut or just cranberries for the topping depending on what you enjoy most. Each topping brings a creative new expression to the flavor palette. Store in the fridge so they can firm. Don’t be afraid to try new combos each time. You will surprised at how delicious each new combination can be. Be creative with your food and Enjoy it!
