Nutritional yeast is a great source of protein and vitamins, especially the B-complex vitamins and is a compete protein. This low fat, low sodium food is free of dairy, sugar and gluten. You want to be sure to pick up the nutritional yeast fortified with vitamin B12, as it is sold with and without the B12.
Nutritional yeast has a rich nutty flavor, and is used as cheese substitute. The nutty, creamy and cheesy taste make it a super condiment used by vegans in place of Parmesan or other places where cheese is commonly used. It is a great topper for soups, salads, Italian dishes as well as popcorn and other snacks. It can also be utilized nicely in potato dishes, as well as tofu, and or eggs. One of my favorite uses is topped on popcorn mixed with a little cayenne pepper, giving it a spicy cheese flavor.
If you haven’t explored nutritional yeast, give it a try as you will see it has a great flavor without the added fat, or sugar, while also provided great nutritional value as well as being a complete protein.
You can find it in your local health food stores or also online at Bob’s Red Mill.
