Vegan Chocolate Cake with Agave & Avocado
Time: 50 minutes
(10 Ingredient Recipe)
Yields: 1 Double Layer 8 inch round cake
Ingredients for Cake:
2 ½ cups whole-wheat flour
½ cup Organic flaxseed meal (Bob’s Red Mill is my favorite)
6 tablespoons unsweetened cocoa powder
2½ teaspoons baking powder
2 teaspoons baking soda
2 cups organic agave
½ cup organic avocado, mashed well
2 cups alkalized antioxidant rich water
2 tablespoons organic lemon juice
2 teaspoons vanilla
Directions for cake:
Preheat the oven to 350. Spray two 8-inch cake pans with extra virgin olive oil cooking spray. Take medium bowl, combine together dry ingredients. Take a large bowl, combine agave and avocado stirring together. Add water, lemon juice, and vanilla stirring evenly. Add dry ingredients, beat until smooth. Pour mixture into the pans and smoothing with with spatula making even. Bake for 40 minutes. Test with toothpick should comes out clean. If it doesn’t add a few more minutes until it does.
**Agave & Avocado Frosting with Vanilla** –
Low Glycemic frosting
(Frosts two 8 inch round cakes or one double layer cake)
Ingredients for Frosting:
1 cup organic avocado
2 tablespoons organic lemon juice
2 cups Agave Nectar
½ teaspoon vanilla extract
Mash avocado in bowl. Beat with mixer on high for 2 minutes until smooth. Should form a creamy consistency. Add lemon juice beat on medium combining well. Add agave nectar and vanilla. Beat on low 4 minutes combining until creamy consistency is formed. Frost cooled cake. Let sit for 5-10 minutes and Enjoy!

A wonderful treat for you and your family and friends,without the guilt of traditional chocolate cakes. Also make wonderful gift for birthday parties or celebrations. I have made so many of these over the years for get togethers and gatherings. There is never any left, which is a great sign that everyone loves this cake, even the kids. I just made your cake. I was making the frosting but it is way too runny. I even put in more avocado and it is still runny. Any suggestions?
You may just need to chill the ingredients for a few minutes so that they can congial together. If that doesn’t work you can add a little bit of any type of whole grain flour, whole wheat flour, oat flour, barley flour, or even a tiny bit of cornstarch. Hope this helps.
