Bulgar Wheat Pilaf with Flax Tomato & Onion
Naturally Vegan & Vegetarian

2 Tbsp. Extra Virgin Olive Oil
1 Cup Organic Bulgur Wheat (I use Bob’s Red Mill)
1/4 Cup Raw Organic Flaxseed (I use Bob’s Red Mill)
1/3 Cup Organic Onion, diced
1 Small Organic Roma Tomato, chopped, fine
2 Cups Organic Vegetable Broth (Home made is the best and most affordable)
1 Tsp. Organic Lemon Juice
1/4 Tsp. Organic Oregano


In medium saucepan on medium heat add olive oil, bulgur, flaxseed, and onions.  Stir for 3 minutes until bulgur becomes golden.  Stir in tomato, vegetable broth, lemon juice and oregano.  Cover, bring to a boil.  Lower heat and simmer for 12 minutes until broth is absorbed.  Fluff with fork and let stand 10 minutes to cool.
