Spicy Veggie Flax Burger with Bell Peppers & Black Beans

Yields: 4 Large Burgers

1 cup organic flax meal
2 Cups organic black beans, rinsed and drained (I use the dried and soak them day before – makes more & cheaper)
1 Organic Jalapeno, seeded, chopped fine
1 organic onion, chopped fine
1 organic bell pepper, chopped fine
4 cloves organic garlic, chopped fine
1/4 Cup Organic Zuchinni, shredded fine
2 Tablespoons Extra Virgin olive oil
2 Tablespoons Organic Lemon Juice

Take onion, bell pepper, jalapeno, garlic, zuchini, olive oil and lemon juice mixing together, add flax meal and black beans.  Food process all ingredients together to a nice rustic chop.  Form patties.  In a non stick skillet take patties and cook each side until a golden crust forms.  Flip and cook on other side. Take your whole grain bun (we use the ezekial whole grain), fresh lettuce, tomato and your ready to eat.  Makes a delicious alternative to other unhealthy burgers.  These are deliciously juicy and filling and are a favorite in our household.

A little Note to You:

Keep in mind when you soak the beans yourself you get so much more for the money.  The price of one or two cans you can make these burgers for the month and your money goes so much further.  When you buy the cans they are ladened with salt and other unnecessary preservatives, unlike the bag of beans you soak yourself controlling what goes inside.  Although it takes time to soak, you can make soaking your beans a regular weekly thing.  Once you have them soaked you can use them for so many recipes and again you save huge on the processed can type.  When you soak your own you are getting fresh beans that are healthy and delicious and you control what goes inside.
