Tomato, Basil, Garlic Chicken With Brown Rice, Carrots, Broccoli & Mushrooms

Ingredients:
1 Cup Brown Rice
3 Cups Vegetable Broth (preferably home made no salt)
2 Tablespoons Extra Virgin Olive Oil
2 Cloves of Organic Garlic, chopped fine
4 Pieces Organic Chicken Breast, skinless, boneless
1 Small Organic Onion, cut into wedges
1 Cup Organic Broccoli
1 Organic Carrot, sliced
1/2 Cup Organic Cherry Tomatoes, cut and halved
1/2 Cup Organic Mushrooms, sliced
1/2 Cup Organic Basil
Directions:
In a large skillet on medium heat fill with rice, olive oil and vegetable broth, cooking on high covered for 10 minutes. Reduce to simmer. Add Garlic, onions, broccoli, carrot, tomatoes and mushrooms. Cook 10 minutes covered on medium until chicken juices run clear and vegetables are fork tender. When done sprinkle chopped basil over the top and serve. Keep in mind the timing is just an estimate as different stoves and cookware may cook faster or slower. Watch your stove and be sure not to overcook.
