Portobello Pita with Roasted Red Peppers & Onions

Ingredients:
4 large Organic Portobello Mushrooms, stems removed and gills scraped out
2 Organic Zucchinis, sliced lengthwise
1 Organic Red Onion, cut into 4 even slices
1 Organic Red Bell pepper, thickly sliced
3 tablespoons Organic Lemon Juice
1 tablespoon Extra-Virgin Olive Oil
1/4 teaspoon Black Pepper
4 Organic Whole Wheat Pitas, halved
1/4 Cup Goat Cheese, to top the roasted veggies
Directions:
Take mushrooms, bell peppers, onions, and zucchini, tossing them in olive oil, lemon juice and pepper. In a medium pan sautee vegetables, covered, 4 minutes on each side until tender. Let vegetables cool for 2 minutes, then chop in large rustic chunks. Stuff veggies in pitas and then top with goat cheese.
