Fresh Fruit & Agave Preserves

(4 Item Recipe)

To ensure shiny, clear preserves, skim off and discard any foam from the surface of the mixture as it cooks.


1 pound fresh organic fruit of choice
(strawberries, blueberries, blackberries, raspberries, apples, peaches, plums, oranges, figs or other favorite)
1/4 cup organic agave
1/4 cup water
1/4 organic lemon, thinly sliced, seeds removed


Chill small plate in freezer for 30 minutes to check the preserves (You will use this to determine if done see tips)

In pot on medium heat cook fruit, agave, water and lemon covered, stirring once, until boiling, about 5 minutes. Uncover continue boiling 10 minutes until thickened, without stirring. Do check below to determine if done.  You will need your small frozen plate for the test. When confirmed done, put hot preserves into a glass jar or other heatproof container, seal tight and store in refrigerator.

Tips for success:

To check preserves drop a small spoon of preserves onto a chilled plate. Tip the plate and allow preserves to run. Swipe finger through the middle of the run. If the preserves don’t run back together, they’re thick enough and ready to remove from the heat.
