What is the Glycemic Index?

Understanding the glycemic index is really important to the health of all.  This index is a measurement showing us the impact of foods on the blood sugar levels. Foods with high glycemic index have carbohydrates the body can quickly convert to sugar, which creates a quick rise in blood sugar.

The glycemic index of food is determined by consuming a portion of food and then testing the blood sugar levels.  The results are then assigned a numerical value.  Glucose has a rating of 100, while all other foods are measured based on this glucose value.  Foods that have a glycemic index beyond 100 are foods whose carbohydrates digest quickly and are likely to raise blood sugar levels instantly, while those with a glycemic index lower then 100 have less impact on the blood sugar.
