1 Tablespoon Extra Virgin Olive Oil
1 lb Lean Ground Organic Chicken, hormone and antibiotic free
2 Cups Organic Brown Rice
1 Cup Organic Tomatoes
1 Small Organic Red Onion
1 Organic Red & 1 Organic Yellow Bell Pepper, stem and membrane removed
1 Cup Organic White Cheddar (optional)
Preheat oven to 350. Place olive oil in a large skillet over medium high heat. Add ground chicken and cook until light brown. In a food processor take tomatoes, red onion and peppers pulse until you get a rough chop. Take wet ingredients and mix together with the chicken and rice. Place in a 9 x 13 baking dish. Bake 40 minutes until baked through. Great topped with organic white cheddar. If you do not eat dairy or are avoiding it sprinkle with nutritional yeast.
If you are vegan or vegetarian simply remove the ground chicken and add crumbled tofu. Remove the white cheddar and top with nutritional yeast.
