Grilled Mozzarella Sandwich with Tomato, Parsley & Red Onion

6 Slices Sprouted Grain Bread (I used Ezekial Sprouted Grain Sesame bread)
1 Cup Organic Part Skim Mozzarella, shredded or sliced thin
2 Teaspoons Organic Vegan Butter
1 Organic Roma Tomato, sliced thin
1 Organic Red Onion, sliced thin
1/2 Cup Fresh Organic Parsley, diced up
Take Bread and stack sliced tomato, red onion and diced parsley on bread. Top with freshly shredded cheese. Take other slice of bread and put on top. Brush both sides with vegan butter. In a medium pan on medium heat cook sandwiches 1-2 minutes on each side until golden and cheese melts. It is helpful to put a lid on pan to help cheese melt. These sandwiches are super quick and really delicious. Garnish plate with a sprig of parsley.
We make these often in the house and they are really enjoyed. The fresh vegetables added spruces up a plain old grilled cheese incorporating some nice fresh flavors. Using the part skim mozzarella cheese you cut the fat from your standard cheese which has much more fat. We love making these as triple deckers also, which look really pretty when served. Super fast finger foods for kids. These go over great for get togethers with friends and family where you don’t want to be stuck in the kitchen. We serve these with a small salad or soup on the side and they are filling and delicious.
