Cool Cucumber Quinoa & Almond Summer Soup with Grapes & Garlic

Ingredients:

6 oz Raw Organic Almonds, blanched
3 Organic Garlic Cloves, peeled
4 oz Organic Quinoa
5 Tablespoons Extra Virgin Olive Oil
4 Tablespoons Organic Lemon Juice
4 Cups Purified Alkalized Antioxidant Iced Water
3 oz Seedless Organic Grapes, sliced in halves
1/2 Cup Organic Cucumber, diced small

Directions:

Cook quinoa per directions and set aside to cool to room temperature. In food processor combine almonds, garlic, and lemon juice and pulse until processed but not smooth.  Add cooked quinoa and olive oil pulsing until emulsion is formed.  Take all items and blend iced water together. Pour into small bowls add sliced grapes and cucumber drizzle with olive oil and serve.  Goes delicious with rustic organic artisan bread.
