Honey Curry Chicken Salad with Ginger, Almonds, Grapes & Celery

Ingredients:

10 oz Cooked Organic Chicken Breast, Boneless, Skinless
1 Organic Celery Stalk
1 Tablespoon Organic Lemon Juice
1/2 Cup Vegan Mayo Lite (optional)
1/4 Cup Non Fat Yogurt
1 Teaspoon Fresh Organic Ginger, peeled
2 Teaspoons Curry Powder
1 Teaspoon Organic Honey
2 oz Organic Red Onion
4 oz Organic Grapes
1 oz Organic Almonds, slivered

Directions:

In Food processor add celery, lemon juice, mayo, yogurt, ginger, curry, and honey.  Pulse until smooth.  Add chicken until rough chop is achieved.  For a chunky salad 3-4 pulses, for a smooth salad 6-8 pulses depending on the consistency you enjoy most.  Put in a bowl and toss grapes and almonds in.
