Honey Walnut Chicken Salad with Grapes, Celery & Poppy Seed Dressing

1 cup vegan mayonnaise, light
4 teaspoons organic lemon juice
5 teaspoons honey
2 teaspoons poppy seeds
Salt and freshly ground pepper to taste (optional)
2 pounds boneless, skinless chicken breasts, grilled and chilled
3/4 cup organic raw walnut pieces
2 cups organic red seedless grapes
3 stalks organic celery, thinly sliced
In a bowl, combine mayonnaise, lemon juice, honey, and poppy seeds. Refrigerate until ready to toss the salad. In a pan on medium heat grill chicken on both sides until golden. Remove cooked chicken breasts from pan, cool at room temperature for 10 minutes, then cover and refrigerate.
When the chicken is cold, dice into bite-size chunks and transfer to a large bowl.
Stir in walnuts, grapes, celery and dressing.
This chicken salad is one of my favorites. With grilled chicken breast, crunchy walnuts and sweet grapes in each bite it makes for a delicious and refreshing salad anytime.
You can make the dressing up to 2 days ahead.
