Artichoke Hearts With Basil, Garlic & Goat Cheese

2 1/2 Cups Organic Artichoke Hearts, Sliced
1/2 Cup Organic Low Fat Cottage Cheese
1/2 Cup Organic Goat Cheese
2 Tablespoons Organic Basil
1 Clove Organic Garlic
1/4 Teaspoon Organic Lemon Juice
1/8 Teaspoon Fresh Ground Black Pepper


Preheat oven to 375.  Place sliced artichoke hearts on a baking dish.  Take cottage cheese and food process until smooth.  Add remaining ingredients pulsing 3-4 times until combined.  Spoon mixture on top of artichoke hearts in baking dish.  Bake 8-10 minutes until cheese begins to brown on top.


We love these with a nice big salad and some warm rustic organic bread. If you have a Trader Joe’s near they have wonderful artisan breads very affordable that go great with these.
Goes over great as an appetizer or topped on a bed of organic greens.
