Baked Basil Parmesan Onions with Garlic & Fennel

6 Organic Onions (3 White and 3 Purple), small size
1 Tablespoon Extra Virgin Olive Oil
1/3 Cup Organic Bread Crumbs
2 oz Organic Parmesan Cheese
1/4 Cup Fresh Organic Basil
1/2 Bulb Organic Fennel
Preheat oven to 325. Peel onions and slice off top. Scoop out inside of onion, and place onions in a shallow baking dish. Combine olive oil and breadcrumbs in a small bowl. In food processor take Parmesan , basil and fennel pulsing 4-5 times until evenly and finely chopped. Spoon mixture into onions, sprinkle breadcrumbs on top an bake 30 minutes until top is golden brown.
These go great with a salad and some organic rustic bread. Also makes a great appetizer. We like to sprinkle a little gorgonzola on top of each onion while its hot. Super delicious and cheesy onions.
