Roasted Red Potatoes With Garlic, Peppers & Onions

1 lb Organic Red Potatoes, cut into quarters
1 Organic Red Pepper, cut in pieces
1/2 Small Organic Red Onion, sliced thin in strips
2 Cloves Organic Garlic, sliced thin
1 Tablespoon Extra Virgin Olive Oil
Sea Salt & Fresh Ground Pepper to taste
Wash and cut all ingredients. In a large skillet heat up pan on medium heat. Add olive oil potatoes, peppers onion and garlic. Cook until golden brown on both sides. Season with sea salt and pepper to taste.
We love making these with omelets for breakfast, brunch or lunch side. The potatoes are so hearty they can also be made as a main dish with a side salad for lunch.
These potatoes can also be made in the oven depending on preference.
