Golden Potatoes With Garlic & Onions

1 Lb Organic Russet Potatoes, grated
1/2 Organic Onion, choped
1 Clove Organic Garlic, minced
1 Tablespoon Extra Virgin Olive Oil
Sea Salt & Fresh Ground Pepper to taste
Grate potatoes and set aside. Chop onions and mince garlic mixing together. Take mixture and add to potatoes. In a hot skillet spread 1/2 of olive oil in pan. Add mixture evenly distributing in pan evenly. Cook on medium heat. Season with sea salt and freshly ground pepper if desired until golden brown. Flip to other side cooking until golden on both sides.
We love these served with fresh organic applesauce.
Another family favorite is topping them with some fresh cut seasonal herbs.
Everyone in the family enjoys them and it makes a nice filling breakfast or brunch.
