Onion Soup with White Cheddar & Sage

Time: 1 Hour and 10 minutes
Yield: 8 Servings

Ingredients:

4 Tablespoons Extra Virgin Olive Oil
2lbs Organic Yellow Onions
1/2 Teaspoon Dried Organic Thyme
8 Fresh Organic Sage Leaves
1/2 Teaspoon Organic Lemon Juice
1 Tablespoon Organic Whole Wheat Flour
3 Cups Purified Water
3 Cups Organic Vegetable Broth
1 Organic Baguette Sliced
6 oz Organic White Cheddar

Directions:

Heat olive oil in large saucepan over medium low heat.  In food processor take onions and pulse until chopped.  Add onions, thyme, lemon juice in saucepan and cook, stirring frequently, until deep golden about 4o minutes.  Stir in flour and cook for 1 minute, stir in water and broth and simmer for 30 minutes.  Toast baguette slices.  Shred cheese.  Place serving of soup and top with baguette slices; sprinkle with shredded cheese.  Add a fresh sage leaf to each serving of soup.
