Red Potatoes with Onions, Fennel & Sage

Ingredients:
5 Medium Organic Red Potatoes
1 Medium Organic Yellow Onion, cut into slices
1/2 Cup Organic Soymilk
3 oz Fresh Organic Fennel Bulb Sliced thin
8 Fresh Organic Sage Leaves
8 oz Nutritional Yeast
Sea Salt & Freshly Ground Pepper
Directions:
Preheat oven to 350. Spray an 8 inch square baking dish with non stick cooking spray. Slice potatoes and onions thin with mandolin or by hand. Season potatoes with sea salt and pepper. In baking dish assemble potatoes, onions and fennel alternating through to evenly disburse. Add soymilk and top with nutritional yeast. Cover and bake for 1 hour, remove cover and bake for 15 minutes more. Top each serving with a 2 fresh sage leaves.
