Agave & Lemon Steamed Veggies
With Brown Rice

2 Cups Organic Brown Rice, cooked
2 Tablespoons Organic Lemon Juice
2 Tablespoons Extra Virgin Olive Oil
1 Cup Organic Baby Carrots
2 Large Fresh Organic Purple Beets, round sliced
1 Medium Organic Zucchini, sliced
1 Organic Red Bell Pepper, sliced
Organic Agave, Drizzle over top
Cook brown rice per package instructions. In a large pot bring 2 inches of water to simmer over medium heat. Slice up all veggies. Place veggies in pot and cover. Reduce heat to low and steam for 5 minutes. Take olive oil and lemon juice mixing together. Take mixture and top over steamed veggies and then drizzle agave lightly over veggies. Accompany veggies with fresh steamed brown rice.
Not only is this dish super affordable but also extremely healthy. I pick up the rice in the bulk section of the grocery store and made the rice for 4 for only $.50 cents. The beets I picked up were from the loose beet section which typically have their tops missing or broken which doesn’t matter as it only reduces the cost, and I am going to remove them any way. After boiling the beats I saved the juice and drank it later.
