Tomato, Parsley Parmesan Bread With Roasted Garlic

Ingredients:

3 Slices Organic Sprouted Grain Bread (I used Ezekial)
1 Clove Organic Garlic, minced
2 Organic Roma Tomatoes
1/4 Cup Fresh Organic Parsley
1/4 Cup Fresh Parmesan *(Vegan Vegetarian omit sub nutritional yeast)
2 Tablespoons Extra Virgin Olive Oil

Directions:

In hot skillet add olive oil and garlic.  Cut your bread in diagonal slices.  Take the bread triangles and place in skillet over cooking garlic.  Grill bread 2 minutes until lightly golden and toasted.  When you pull bread out it should have garlic pieces on it, if not spoon them out and place on the bread.  Be aware that the garlic cooks fast so remove it once it turns golden making sure not to burn it. Slice Roma tomatoes thin and place on top of the bread lightly dusting it with Parmesan and topping with a pieces of parsley.

*Vegan Vegetarian Version*

If you are Vegan Vegetarian omit the parmesan and substitute nutritional yeast in place of diary cheese.
