GRILLED CHICKEN W/ CUMIN QUINOA & STEAMED VEGGIES

16 Organic Chicken Tenderloins
2 Cups Organic Quinoa (We buy the bulk quinoa)
1/4 Cup Organic Onion, chopped
1/2 Head of Fresh Organic Broccoli, Steamed
1 Organic Carrot, sliced, steamed
In a small pot cook quinoa according to package instructions, adding 1/2 teaspoon cumin and 1/4 cup chopped onions. When quinoa is 1/2 way done start chicken and steamed veggies. In a large heated pan cook the chicken a couple minutes on each side turning until golden. While chicken and quinoa are cooking steam one carrot and 1/2 head of broccoli. All should be done together plate food and enjoy.
This meal comes in at under $2 per plate the meal for four came in at under $10 for a family of 4. Children tend to eat less pieces of chicken so if you are not preparing the meal for 4 adults then you will be using less and bringing the cost down. Who ever said healthy foods were expensive? This meal tends to be way less then fast food for 2 or even store bought pre- made meals. It is extremely nutritious and delicious and very affordable for all.
Dipping Sauce for Chicken:
I love to make this dipping sauce for chicken. Take 1/4 Cup olive oil, 1/4 cup minced onion, 1/4 cup lemon juice, Teaspoon of fresh parsley, sea salt and pepper. Mix up well and serve on the side as a dipping sauce. I like to put some over top my chicken and my quinoa too.
