Carrot, Avocado & Pepper Sandwich

Yield: 1 Whole Sandwich

Naturally Vegan & Vegetarian Recipe


2 Slices Organic Sprouted Grain Bread
1/2 Cup Organic carrots, shredded
1 Slice Organic Tomato
2 Rings Organic Red Pepper
1/4 Cup Organic Avocado, cut into slices
1/4 Cup Organic Hummus
1/4 Cup Organic Sunflower Sprouts


Take Two slices of warmed, lightly toasted bread face down.  Add 1/4 Cup of hummus to one side. Then press shredded carrots to hummus mixture.  Then add the tomato slice, followed by the sunflower sprouts and avocado slices.  Lastly take the red pepper slices and push them into the avocado and top with last slice of bread.  I enjoy this most dipped into some olive oil and lemon juice with a little bit of sea salt and freshly ground pepper.

  2. Its nice on the eyes and the combo of the taste and textures is even more pleasant in your mouth. You have the creamy smoothness of the hummus and the crunchy of the the veggies and the silky avocado with the warmed bread. Mmmmm. I am hungry again just talking about it.
