GOLDEN GRILLED GARLIC CHICKEN W/ ONIONS, PEPPERS & MUSHROOMS

Ingredients:
12 Organic Chicken Breast Tenderloins, Hormone & Steroid free (Trader Joe’s or Whole Foods) OR (1) package firm organic Tofu (I got my firm tofu from Trader Joe’s – great price)
1 Organic Onion, cut into strips
1 Cup Whole Organic Mushrooms, cut thin
1 Organic Red Bell Pepper
3 Organic Cloves Garlic, sliced in thin slices
2 Tablespoons Extra Virgin Olive Oil
Freshly Ground Pepper
Sea Salt
Directions:
In a small fry pan preheat to medium high heat. When pan is hot add 1 tablespoon of oil to pan. Add onion strips, sliced garlic, and red pepper slices. In another pan preheated to medium high heat when hot add 1 tablespoon olive oil. Then add your chicken tenderloins. Sea salt and freshly ground pepper to taste on each side flipping when golden brown typically about 3 minutes per side. You want it golden with the juices running clear. While this cooks on both sides, in the other pan keep stirring and tossing onion, pepper, mushrooms, and garlic mixture until browned and onions carmelize. When both are done take the chicken tenderloins and plate them adding onion, pepper, mushroom and garlic topping to the chicken. It taste really good when you get a bit of each in the bite. This is super healthy and delicious.
Note:
We were able to make this for $.20 cents per chicken breast tenderloin, plus the cost of the spices and onion, mushroom, pepper and garlic mixture. We usually do 3-4 tenderloins for an adult and 1-2 tenderloins for a child. The onion, pepper and spice mixture $.75 cents for the onions, peppers, mushroom and garlic mixture per topped chicken breast plate. This meal comes in not only registering with great nutrition and super quick but also AFFORDABLE. This dinner runs Under $2 per Adult plate, and under $1 for each children’s plate. I find if we are extra hungry I add some bulk quinoa and for another $1 I can make a large pot of quinoa that comes in at another $.25 cents to the meal. If you add these on to the previous plate cost you come up with a little over $1 dollar previous and a little over $2 coming in at $2.2.5 for Adult plate and $1.25 for children’s plate of food. Super healthy grain and way affordable. This meal is fresh, fast, delicious and nutritious!

**To save additionally on the chicken we picked up the flash frozen at Trader Joe’s and got the bag for $6.99 for 2 lb bag of tenderloins. Whole Food’s has the same thing for $9.99 for a 2.5lb bag of tenderloins. Since fresh chicken is much more if you are on a tight budget don’t spare the quality of what you are getting but save by getting the flash frozen type**
Vegan & Vegetarians
For my vegans and vegetarians or simply to have lights out on meat you will save big as the tofu is less costly then the chicken. Slice tofu into large steaks. Pan sear the tofu on each side in a little olive oil on medium until golden color. Flip and cook the other side until golden. Top with onion, garlic, mushroom and pepper mixture.
