ORGANIC WHOLE WHEAT FETTUCCINE NOODLES WITH MARINARA & WHOLE WHEAT BREAD STICKS

Time: 45 Minutes – Fresh Home made Organic Sauce Recipe
Yield: 4 Large Adult Servings

Affordable Vegetarian Dinners Under $2 per person

Ingredients:

1 Large Can no sodium chopped tomatoes with basil (trader joes $1)
1/2 Large Organic Onion (whole foods/trader joes .50 cents)
4 Cloves Organic Garlic (whole foods/trader joes .50 cents)
1/4 Cup Fresh Chopped Organic Flat Leaf Parsley (trader joes $1)
1 Package Organic Whole Wheat Fettuccine Noodles (used whole foods$1.50)
1 Package Trader Joe’s Fresh Organic Whole Wheat Pizza Dough ($.99 cents)
1 Tablespoon Romano Peccorino Cheese or Nutritional Yeast (.25 cents)
1 Head Organic Broccoli (trader joes/whole foods $1.25)
Sea Salt & Freshly Ground Pepper to taste

Directions:

In large pot take olive oil, onions and garlic.  On medium high heat cook stirring until golden.  Onions should turn translucent when done.  Add can of chopped tomatoes no sodium.  Add 4 cups of purified water to tomato, onion, garlic mixture.  Cooking down with rolling bowl until reduces.  Approximately 45 minutes.  Sauce should thicken to a rustic tomato sauce.

Steam broccoli being sure not to overcook.  It should come out a bright green for optimal nutrition.

In another pot heat boiling water on medium high heat.  Approximately 10 minutes before sauce is done.  Preheat oven to 350 for breadsticks.  Get out a small pan to boil the noodles in.  Heat to a boil cooking to desired tenderness consulting package for optimal cooking for particular brand.

In preheated oven on 350 while other is cooking take pizza dough and cut into strips for bread sticks.  Cook bread sticks in oven for 10 minutes.  They all should complete at the same time. Plate the food and enjoy!  Super delicious, nutritious, and affordable.  Coming in at $1.68 for adult portion with 4 bread sticks.

Vegan/Vegetarian Option
Remove dairy cheese and substitute in nutritional yeast or your favorite cheese replacement. ny cost brings the cost down to much less.
