12 Organic Chicken Breast Tenderloins
2 Cups Organic Quinoa, cooked
1 Large Organic Potato steamed and smashed
1/4 Organic White Onion, chopped
2 Cloves Organic Garlic, minced (optional)
1/2 Organic Jalapeno, minced (optional)
Extra Virgin Olive Oil
Sea Salt & Freshly Ground Pepper
In a large pan boil water to cook quinoa. While awaiting quinoa cook a large potato until steamed, then smash. Once quinoa is completed add smashed potato to the quinoa mixture. Add in 1 teaspoon olive oil, sea salt and pepper.
In another pan on medium high heat,while you are awaiting quinoa take jalapeno, onion, and garlic with a tad of olive oil heat these up until they carmelize and become translucent. Set aside when done
In a large pan on medium high heat cook chicken sprinkling with freshly ground pepper and sea salt. Cook both sides until juices run clear and chicken is done. When done plate with a scoop of onion mixture first then 3 chicken tenderloins on top, then large scoop of potatoed quinoa. This dinner comes in under the $2 mark per plate. It is super nutritious, low fat and high protein.
