Lemon Garbanzo’s with Olive Oil & White Onion (Bean Salad)

2 Cups Organic Garbanzo Beans, drained (we soak our own fresh)
1/4 Cup Organic Lemon Juice
1/4 Cup Organic White Onion, chopped
Extra Virgin Olive Oil
Sea Salt & Freshly Ground Pepper to taste
Take your garbanzo beans and drain them.
If you made them from scratch be sure they are cool. We make them from scratch which requires the night before soaking then simmering for an hour. It really reduces the cost of the beans substantially making them from dried hard beans. Take your drained beans and mix in white onion mixing well.
In a separate bowl mix olive oil, lemon, salt and pepper together and then dress the salad. Tossing until even and well coated. This is a delicious simple salad loaded with protein.
