Quinoa and Jalapeno Eggs

2 Cups Organic quinoa, cooked (per package instructions)
1/4 Cup Organic Onion, diced
1/4 Organic Jalapeno, diced fine
3 Organic Eggs (2 yolks & 3 Whites)
1/4 Cup Organic Soy Milk
Sea Salt & Freshly Ground Pepper
In small pan on medium heat cook quinoa per instructions. When done turn off and set aside. In a small frying pan take onions and jalapenos and pan sear until golden. In a bowl take 3 egg whites and 2 yellows and soymilk mixing together until evenly distributed. Add sea salt and pepper. When onions and jalapenos are golden take egg mixture and mix into pan on medium heat. Cook until eggs are no longer wet.
Plate taking a large 1/2 cup scoop of quinoa and top egg mixture on top. Also is delicious with fresh salsa.
