CRACKED WHEAT CHICKEN W/ JALAPENO, ONION & BLACK BEAN BURRITO

Whole Wheat Organic Tortilla
6 Organic Chicken Breast Tenderloins
1/2 Organic Onion, chopped
3 Bulbs of Organic Garlic, diced
1/2 Organic Jalapeno, chopped
1 Cup Organic Black Beans
Sea Salt to taste
Freshly Ground Pepper to taste
In a large pan on medium heat cook chicken breast through until juices run clear.
We used the Trader Joe’s Whole Wheat Tortillas that were a great value at under $3 which was enough for the entire family to have several burritos.
In another pan heat up organic black beans to go in burrito and outside on plate. Take spoonful of beans and put on the warmed tortilla. Take a spoonful of chicken put in tortilla. Last take the onion jalapeno mixture and take one spoonful into tortilla.
You can top with a little parmesan cheese sprinkled or if you are vegan vegetarian sprinkle a little nutritional yeast. Roll burrito up and serve with a spoonful of black beans on each plate.
We were able to feed a family of 4 each having seconds and leftovers for under $8. We made 10 burritos with the mixture and ate 8. We were all very hungry. The meal came in at a little under $2 per plate plus leftovers. This meal was really enjoyed. Super affordable, fun and fast. We were eating in no time and enjoyed the process making up our burritos.
