BBQ Tofu Quinoa Burrito – Amazing @ $.65 cents each!

BBQ TOFU BURRITO
Naturally Vegan & Vegetarian

Yield:10 Burritos
(10 Item Recipe)

Ingredients:

1lb Organic Firm Tofu (We used Trader Joe’s little over $1)
1/4 Cup Organic Onion, diced
1 Clove Organic Garlic, Minced
1/4 Cup Organic Oats
1 Teaspoon Organic Cumin
10 Organic Whole Wheat Tortillas
2 Cups Organic Quinoa, cooked (I used leftover brown rice)
1/4 Cup Organic BBQ Sauce, low sugar and low sodium
Freshly Ground Pepper & Sea Salt to taste
2 Tablespoons Extra Virgin Olive Oil

Directions:

In a medium size pot add water and bring to boil. While waiting for water to boil rinse quinoa. Upon boiling add quinoa. Bring to a boil, reduce to simmer covered.
Remove tofu from container. Set a plate on top of it for 30 minutes sitting it out on the counter.

Drain and remove any excess fluid. When done cut into small bite sized cubes.

Take oats and seasoning mixture and spread onto tofu evenly distributing. I tossed it with a spoon to coat it all over.


In a large preheated skillet on medium high heat, add olive oil, then take your onion and garlic on bottom then top with cubed seasoned tofu cubes.

Heat tofu, onions and garlic until golden.

Spoon mixture into warmed tortilla, add two spoonful of quinoa and bbq sauce down the center.

Wrap burrito up and prepare to feast on a healthy and delicious meatless dinner.

Affordability Factor:

$1.30 per 2 burrito plate, $.65 cents for single burrito
**Meal Total for Five $6.50**

We were shocked at the feast this meal prepared. We spent a little over $1.20 on 1lb package of tofu from Trader Joe’s, We spent $1 in the bulk section at Whole Foods on the Organic Quinoa, the oats from the bulk section Whole Foods at twenty cents, the bbq sauce and seasonings we had at the house. We only used $2 in bbq sauce and seasoning as we used so little. The organic tortillas were $2 for 10. The total price for the dinner feast came out to $6.50 for 10 filling burritos. This fed 5 of us for $6.50 which came out to $1.30 per plate with 2 burritos each. The kids at only 1 each which stretches the meal. We had leftovers for the next day and everyone really enjoyed the meal.
