GRILLED CHICKEN W/ ONIONS, GARLIC & JASMINE RICE

6 Organic Chicken Breast Tenderloins
1/2 Medium Organic Onion, sliced
2 Cloves Organic Garlic, sliced
2 Cups Jasmine Rice
1 Teaspoon Extra Virgin Olive Oil
Sea Salt & Freshly Ground Pepper to taste
1 Large Organic Tomato, chopped
1 Large Organic Lemon cut in 4 (optional)
Take your jasmine rice and water and begin cooking rice so that all the food is ready at the same time. When the water has evaporated and rice is just about done add the chopped tomato.
In a large pan on medium high heat take extra virgin olive oil onto pan. Heat oil and then add the chicken breast, onions and garlic. Cooking until golden on each side. Once chicken is done set aside to cool. Then cut into slices. Take a 1/2 cup of rice per person then top with sliced chicken breast, onions and garlic. Add sea salt and freshly ground pepper to taste.
I topped mine off with a squeeze of fresh lemon. This is optional but goes wonderfully with the rice and tomatoes.
