Carrot, Potato & Ginger Soup w/ Parsley & Pumpkin Seed

Ingredients:
4 Cups low-sodium organic vegetable broth, divided (I make my own)
1 Organic Yellow Onion, chopped
3 Cloves Organic Garlic, finely chopped
2 Teaspoons Freshly Grated Organic Ginger
1 Pound Organic Carrots, coarsely chopped
1 Medium Organic Yukon gold potato, peeled and cut into 1 inch chunks
1 Teaspoon Organic Lemon Juice
1 Tablespoon Organic Chopped Fresh Parsley, for topping
1/2 Cup Organic Pumpkin Seeds, toasted and topped for some crunch
