Honey Whole Wheat Banana Pecan Bread

Ingredients:
1/3 Cup Extra Virgin Olive Oil
1/2 Cup Organic Honey
2 Cage Free Organic Eggs
1 3/4 Cup Organic Whole Wheat Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 1/2 Cups Organic Banana, mashed
1/2 Cup Organic Raw, Unsalted Pecans
Directions:
Preheat oven to 350. In a large bowl take oil and honey mixing together. Next add eggs beating well. Add your dry ingredients alternating with the mashed banana.
With a blender mix well until smooth.
Measure out 1/2 cup of pecans then chop. If you like your bread with more nuts you can increase the pecans to 3/4 or 1 full cup based on your preference.
Take your pecans and add them to your wet mixture blending well.
Take a loaf pan and spray with non stick cooking spray. I prefer the olive oil spray but both work well. Pour batter into loaf pan.
Bake at 350 for 45- 50 minutes until golden. Remove from oven cool on rack. Remove from pan when cool and slice loaf. We love to top it with vegan butter while its still hot. Enjoy.
