Minted Lemon Feta Yogurt Dip & Dressing

Yield: 1 1/2 Cups

1 cup Nonfat Organic Greek yogurt
1/4 Cup Organic Feta Cheese, crumbled
1/4 Cup Organic Red Onion, peeled and chopped or grated fine
2 Cloves Organic Garlic, minced
1 tablespoon Fresh Organic Mint, minced fine
1 tablespoon fresh Organic Lemon Juice
Fresh Ground Pepper to taste
Take the above ingredients and mix together until well dispersed. Serve chilled as a dip for veggies, bread, chips, crackers, cooked tofu squares, served as a dip for cooked chicken or meat. Also goes wonderfully served as a salad dressing.
If you are vegan and avoid all dairy simply omit the feta and substitute yellow squash bites for a similar texture.
