Yellow Squash with Tomatoes, Onions, Peppers Topped with White Cheddar & Parmesan

6 Organic Yellow Squash, cut in circles
1 Organic Tomato, chopped
1/2 Organic Green Pepper
1/4 Organic Onion, chopped
1 Clove Organic Garlic
1/4 Cup Organic Part Skim Mozzarella or Organic White Cheddar, shredded – Vegetarian/Vegans omit this step
Organic Parmesan Sprinkled on top – Vegetarian/Vegans omit this step substitute nutritional yeast in its place.
1 Tablespoon Extra Virgin Olive Oil
In a large pan on medium high heat add olive 1 Tablespoon olive oil, garlic and onions.
Saute for 2 minutes. Next add yellow squash, tomatoes, green peppers stirring frequently.
Cook stirring for 5 minutes. You want the squash cooked with a crunch intact.
Once done top with shredded cheese and Parmesan.

**This is an amazing dish in a rollup or on a roll as a veggie sandwich. We love to put the cooked squash in a large roll top with cheeses or nutritional yeast and broil in oven browning and melting cheese for a couple minutes.**
