Sweet Potato Agave Pie w/ Golden Marshmallow Agave Meringue Topping

Filling Ingredients:

4 cups Organic Sweet potatoes, Baked, peeled and cut into roughly equal sized pieces
1 Organic Ripe banana
2 Tablespoons Organic Vegan Butter
1 Cup Organic Agave or 1 Cup Organic Cane Sugar
1 Teaspoon Sea Salt
1 Teaspoon Organic Nutmeg
1 Teaspoon Organic Cinnamon
1 Teaspoon Organic Vanilla

Topping Ingredients:

1/2 Cup Organic Marshmallows or Marshmallow Creme
1 Cup Liquid Organic Egg Whites
1/4 Cup Organic Agave or 1 Tablespoon Organic Cane Sugar
1 Teaspoon Organic Vanilla


Wash potatoes then poke holes in them with fork.  I used 4 Medium size sweet potatoes.  Preheat oven to 350. On baking sheet cook potatoes on 350 for 45 minutes to 1 hour until potatoes are soft.  Pull out of oven and cool.

Once cooled, remove skin.  Then take a large bowl and put the sweet potatoes in it and mash them down.

With mixer add banana mixing together until smooth. Next measure the nutmeg.  If you are using cane sugar add it to the nutmeg, if not you can add Agave when you get to the vanilla step below. Agave is much better for you with a lower glycemic index, if you do not have it on hand organic cane sugar works well also.

Next add the cinnamon, sea salt to nutmeg.

Next add the vanilla and agave to the nutmeg mixture.

Take the vegan butter and add it to the potato mixture.

Add the nutmeg mixture to the mashed sweet potatoes.

With a mixer blend until smooth and well blended.

Next get your pie crust out.  You can make yours fresh or use a pre-made pie crust.

Fill pie crust with potato mixture.

Bake at 350F for about 15 – 30 minutes or until heated well through and edges start to firm.
Remove from oven and let cool about 15 min.

Next get out your egg whites, vanilla, and agave, or cane sugar, beating until soft peaks form.

Once your peaks have formed measure out your marshmallows or marshmallow cream. If using marshmallows microwave for 20 seconds just until they turn into cream and begin melting.

Once stiff peaks have been formed, slowly fold marshmallow into egg mixture folding lightly to distribute marshmallow throughout.

Spread evenly onto top of pie, creating small peaks and mounds for an aesthetic look.

Bake in oven on 350 degrees for about 20-30 min or until marshmallow/egg white layer turns a soft golden brown.

Once it is done serve right away.
