Whole Wheat Penne Pasta w/ Leeks, Peppers & Squash

Ingredients:

1 Box Organic Whole Wheat Penne Pasta
4 Tablespoons Extra Virgin Olive Oil
1/4 Organic Leek cut into rings
1 Small Organic Yellow Squash
1 Small Organic Zucchini Squash
1 Organic Bell Pepper, diced ( I used 1/2 of a yellow & 1/2 of an Orange)
5 Organic Tomatoes, crushed or 1 Large Can Organic Crushed Tomatoes
Sea Salt & Freshly Ground Black Pepper

Directions:

Bring a large pot of water to a boil.  Add penne noodles.  In a small pot take olive oil, bell peppers (all but 2 tablespoons for the pasta water), squash, tomatoes, sea salt and pepper and bring to a boil, then reduce to a simmer. Be sure to stir it every 3 minutes or so until it gets nice and thick.  This should be simmering while the pasta cooks.

Cook penne for 11 – 12 minutes.  When penne is at 8 minutes add leeks and two tablespoons of bell pepper pieces to water and penne.  You can use any pepper green, yellow, orange or red.  It taste great with any color of bell pepper so feel free to use your favorite type.

Let cook until done.  If you like your penne al dente you want to take it out at 11 minutes after it comes to a boil.  If you like softer noodles add an extra minute or two.  Be sure to test the penne to make you just right for you and your family.  Drain pasta and leeks.

Stir your sauce it should be nice and thick and your veggies should be crunchy but warm and cooked.

Place pasta and leeks in bowl then top with tomato sauce with bell peppers and squash. If you wish you can top the meal with nutritional yeast for a vegetarian cheese or you can top it with Parmesan, or just plain.  If you want it bit more spicy add red pepper flakes for a little zip.

Just serve and eat!  Enjoy.

Note:

We make the whole box of pasta which gives us a good amount of leftover for lunches the next day or another meal for everyone.  We take the cooled pasta and throw it in a bag or dish for an easy second meal another time. The pasta stores nicely in the fridge and makes eating it again a super fast meal.  You can also take it with you for lunch for a nice healthy and filling meal.

This is another meal that is super inexpensive but doesn’t skimp on the nutrition level. Its also quick.  I can whip this up and by the time the noodles are done the sauce is ready and dinner is on the table in 15 minutes or less.  I typically bowl the water in a tea kettle for an even quicker cooking pasta it cuts the time down that you are usually waiting for it to boil.  This allows you to throw the noodles right in once the water is in which makes for dinner in a flash.  If you don’t have an electric water boiler don’t worry about it you can make it in the pot the standard way.
