Roasted Peppers & Squash w/ Flax Seed Rice Pilaf

1 Large Organic Zuchinni, sliced
1 Large Yellow Organic Squash, sliced
1 Large Organic Red Bell Pepper, Sliced in rings, then halved
2 Cups Organic Brown Rice
1/4 Cup Organic Slivered Almonds
1/2 Cup Organic Golden Flax Seed, Soaked and added to rice when cooking
1/4 Cup + 2 teaspoons Extra Virgin Olive oil for rice and 2 teaspoons for drizzling veggies
Sea Salt & Freshly Ground Pepper
In a medium pot or rice cooker take your rice, olive oil, almonds, flax seed and water and bring to a boil, then simmer according to rice package until fluffy and done. Keep warm and covered while you prepare the next steps.
While rice is cooking and almost done take your veggies and wash them and cut them up. Put them on a small plate. Then drizzle the veggies with olive oil.
In a large skillet on low heat or flat top grill take your veggies lay them out then sprinkle them with sea salt and freshly ground pepper.
Next sear them on each side for about 2-3 minutes until golden. You want them to still be crisp just seared on each side. Keeping them crisp and not mushy will enable them to keep their nutrition intact which is very important in creating a healthy meal. All too often food is cooked too hot for too long reducing the positive living benefits of the meal. Keep your temperature low. They should still snap when cracked in half if you cooked them right.
Next take your plate and put your hot rice in the center. Allign your squash around the rice and top the center with the peppers. Enjoy!
I love to squeeze fresh lemon on top of this dish. This meal is not only super healthy and delicious but extremely affordable and filling, without weighing you down. A great meal for the whole family when you do lights out on meat for the night.
If you do have a rice cooker it will cut the time down. If you have a instant tea kettle you can also boil the water fast ahead of time and then add your rice and boiling water to the rice cooker to cook it even quicker.
