Mini Bell Pepper Magic
If you haven’t tried the mini bell peppers yet you need to pick some up. They are in season now come in an array of colors and are popping up everywhere. They are much sweeter and crunchier then the large standard bell peppers. They come equipped with much more nutrition as they are smaller and are picked sooner then the large type. They are very affordable being by weight they weigh less which enables you to get the perfect amount you need.

I picked up 4lbs of these for $3.99. I love to lightly grill these for sandwiches, salads, tofu, chicken, to add to quinoa, rice, salads or just eat plain. The small size keeps them fresher and they are just delicious. If you are looking for an affordable healthy snack for your children these make a great snack for your kids and family. Add some zip to your meals with these delicious mini peppers.
If you are looking to sweeten your dish without adding sugar, honey, agave, dates or other, try pureeing the peppers and adding them to your smoothies, drinks, meal, dessert, salad or other. They add a nice fresh sweet kick to your food that doesn’t disappoint.
Delicious Sweet Cilantro Pepper Vinaigrette or Basil Pepper Dressing
Another wonderful use and one of my favorite is using them for a fresh salad dressing. I simply puree the peppers, fresh herbs like cilantro or basil, then add apple cider vinegar, olive oil and a shake of sea salt and pepper for a super fresh dressing.

I buy mine at Costco or the farmers market, my daily lunch = 6 mini peppers, cup of Fage non-fat Greek yogurt with clover honey mixed in, a Gala Apple, and a bottled water. I feel great and am rarely sick!
